Easiest Ever GF Stuffing

Thanksgiving is just days away and most of you are probably gearing up for the big feast! It can be a little bit of a daunting task to try to prepare a gluten-free Thanksgiving dinner without compromising on the taste and flavors everyone enjoys. (Luckily my master chef of a mom, Ginny, has taught me her ways ❤) Also, a lot of gluten-free food doesn’t exactly cooperate when trying to cook with it 😂🤷‍♀️. But I’m here to tell you that there is an easy way to make a delicious gluten-free stuffing that everyone can enjoy!

Easiest Ever GF Stuffing

Ingredients:

  • 2 TBS butter
  • 1/4 of an onion, diced
  • 6-8 celery stalks, diced
  • 1/2 loaf Kinnikinnick gluten-free white bread
  • Poultry seasoning

 

Instructions:

  • Preheat oven to 350° F
  • Cube 1/2 loaf of Kinnikinnick gluten-free white bread and spread evenly in pan (make sure it is only 1 layer of bread…too much bread will make this recipe a FLOP)
  • Over medium heat, melt 2 TBS butter
  • Once butter is melted, add diced onion, diced celery, sprinkle with poultry seasoning and let it simmer! Give it a stir every few minutes 👍
  • Once vegetables are soft, pour mixture evenly over bread and mix together
  • Mix 1/4 cup water with more poultry seasoning and pour over bread and vegetables.
  • This sounds silly – but kind of smash it down so it is even in the pan (helps it bake better, haha!)
  • Cover with foil and cook for 25-30 min. Enjoy!

 

Now, as you will notice, there are not a ton of ingredients listed. Which is awesome because easy cooking is MY JAM. But that means that one thing wrong or missing can ruin the recipe. For this stuffing that is definitely the bread. 100% THE BREAD. You’ve got to get the good stuff and that is Kinnikinnick gluten-free bread! It has a really smooth texture – we all know gluten-free can be kind of…sandy (? haha) at times! So definitely grab this bread if you haven’t tried it yet because it is super yummy!

The Teal Pumpkin Project

Trick-or-Treating is one of those things that every kid, every year looks forward to. (Side note – I do think it’s strange that as parents we are all like, “NEVER take candy from strangers…EXCEPT on Halloween!!” 😂😂😂) But for some kiddos, throwing on that magical $50 sparkly polyester contraption and ringing on door bells is scary not just because of the ghouls and goblins. Kids with food allergies are extra scared and have to be extra cautious during events like this because it could go from fun to tragic in just seconds.

Kiddos with food allergies can’t simply just pick any piece of candy from any bowl. For example, growing up with a severe peanut allergy I knew if there was ANY candy in the bowl at all I couldn’t touch it because of the cross contamination that could happen. And whipping out my EpiPen mid Halloween night just didn’t seem fun. Trick-or-treating was so stressful for me as a kid I just wanted to stop doing it because what was the point?!

Now this isn’t me saying NO ONE HAND OUT PEANUT CANDY because that is completely unrealistic and unfair to the people that enjoy that. Also anyone can be allergic to anything so if we went that route no one would be giving out ANY candy, which is also not where I’m going with this. This is just me saying that maybe in addition to handing out fan-favorite candies we could also have an option available for kids that can’t eat certain candy, or any candy at all. And that is where the Teal Pumpkin Project comes in!

The Teal Pumpkin Project (which was started by FARE {Food Allergy Research and Education}) is pretty simple and straightforward – put a Teal Pumpkin out on Halloween and it is a universal symbol to kids and parents that you have an allergy friendly option for kids. This could be candy in a separate bowl from common allergy triggers OR, as FARE recommends, a non-food option. Think stickers, a little Halloween craft from the dollar bins at Target, glow-sticks, anything! You can also mark your house on their map so kiddos can know exactly where to find allergy-friendly options.

The teal pumpkin is just a great, easy and visual way to make all kids feel included and safe while trick-or-treating! And there are a bunch of cute ways to incorporate a teal pumpkin into your outdoor decor! This one is my personal favorite that I came across and I miiiiiiiiight have to do this next year:

I picked this guy up at Target for just under $7 and it will be out on our porch alongside our traditional pumpkins!:
